Corned Beef Hash

Serves: 8

This is a quick and easy main dish. My family all seem quite fond of it. Add a vegetable and you have a quick meal.

   2 pounds frozen hash brown potatoes (not the shreded kind)
   2 cans corned beef
   1 medium onion chopped
   1/4 - 1/2 cup oil
   Salt and peper to taste


Add oil to skillet and heat. Add hash browns and cook, stirring often, until browned. Add salt and peper to taste. Add onions when potatoes are about half done. When the potatoes are browned, stir in the Corned Beef, breaking it up as you do. Heat continue cooking until well mixed and heated through. You may want to try galic powder or seasoned salt for extra flavor.
